The Fat Duck, Bray,
Berkshire
Well worth legging it to
the
delightful village of Bray to sample Heston
Blumenthal's daring
creations
in this the chef's choice. Top chefs have all
made pilgrimages here and
so
should you. Knowledgeable and relaxed service
exemplified by charming
Manager
Nigel who will take you through the
breakthtakingly original dishes in
intricate
detail. But then the whole point of this
restaurant is that the dishes
are
so complicated that no one in their right mind
would ever attempt them
at
home. Sparkling new decor with lots of leather
and wood just adds to
the
general air of perfection. Perfection which has
duly been noticed as
The
Fat Duck was recently awarded with it's third
Michelin Star. What's
cooking?
Crab biscuit with crystalised seaweed and oyster
vinagrette, veal
sweetbread
roasted in hay and pollen with cockles a la

Le
Champignon Sauvage, Cheltenham,
Gloucestershire The unremarkable pub-like
exterior of this intimate 28 seat restaurant
does little to prepare the
unsuspecting for the exceptional experience
within. Dining room walls
are lined
with Fauvist paintings while tables bear vivid
cover plates - both hint
at the boldness and individuality of the chef's
style. From an amuse
bouche of vivid green and intensely herbal
parsley coulis with parsley
root froth - served alongside a light-as-air
foie gras royale with egg
yolk and brioche cream - to a pre-dessert of
crème brulee
encrusted
with space dust, David Everitt-Matthias's food
continually surprises,
challenges and delights. Flavours are layered
and contrasted in a dish
of meltingly tender sweetbread, crusted with
cocoa nibs, served with
parsnip puree and liquorice jus, displaying the
kitchen's technical
abilities
to pleasing effect. Hedgerow ingredients feature
across the menu from
a slow braised breast of veal stuffed with
nettles and snails to a
dessert
of frozen prune and burdock root mousse with a
wonderfully toasty
almond
ice cream. Service by Helen Everitt- Matthias is
genuinely warm and
welcoming
and prices for food and drink are some of the
most competitive for
cooking
at this level.

North St, Winchcombe, Gloucestershire You don’t need much of an
excuse
to visit the Cotswolds, but here’s one anyway.
Chef/proprietor Marcus
Ashenford last impressed at Chavignol (Michelin
star 1998) and this,
his own
restaurant (Michelin star 2006), likewise melds
British ingredients
with French technique, albeit more simply (and
cheaply); Old Spot pork
with crackling, fondant potato, stuffed cabbage
and a cider jus is
deliciously
typical. Villagey charm comes courtesy of heavy
wood beams and we're
in complete agreement with the reader who says
'anyone who appreciates
cooking and flavours in food could not fail to
be impressed'.
